We’ve flipped the switch from hearts to shamrocks around the Shaughnessy house as we count down to St. Patrick’s Day! With every holiday, I try to make at least one fun holiday treat but truth be told, I love a good semi-homemade dessert because things are always busy and sometimes I just want to get it done and move on to the next thing. SO, this snack mix I’m sharing is sweet, salty, super festive, and really easy to make. Plus, my kids think it’s cool to eat and I like that it’s something different than our usual cookies and cupcakes; always good to change things up every now and then if you ask me. Hope you enjoy it!

INGREDIENTS 

1 and 1/2 cups Lucky Charms cereal pieces

1/2 cup Lucky Charms marshmallows pieces (picked out of cereal) – mom tip: have your kiddos sort for you 🙂

2 cups Corn Chex cereal

1 cup miniature tiny twist pretzels (any small style is great but this size mixes well)

1/2 cup (or less) green M&Ms (optional)

1 bag (11 ounces) white chocolate chips or melting white chocolate bar (I like Baker’s brand!) – you can also substitute melted almond bark if that’s more your style

Other mix-ins: I’ve seen recipes that also add in peanuts, sprinkles…you can really throw in whatever sounds good to you but make sure that if you add in extras beyond this recipe, you may need to reduce the quantity of some of the other ingredients to make sure you have enough chocolate to coat everything evenly.

DIRECTIONS

Line a sheet pan with parchment paper (or another non-stick surface) and set it aside. 

In a large bowl, combine the Lucky Charms pieces, marshmallows, Chex cereal, pretzels, and M&Ms (if you’re using them).

In another bowl, add the white chocolate chips and microwave slowly until melted. I usually do 30 seconds, stir and microwave for another 30 seconds until it’s completely melted and smooth. When it’s ready, pour the melted white chocolate over the snack mix. 

Gently stir until everything is combined and then transfer onto the baking sheet or flat surface in one, even layer. The thinner you layer it, the quicker it will cool and harden.

Allow it to harden at room temperature (usually takes around 30 minutes) or you can also pop it in the fridge to speed things up. Break it into pieces and store in an air-tight container or fill it into plastic bags for sharing. That’s it, easy peasy!
