Some of you may know, Halloween is not exactly my favorite holiday; I could do without it. For me, the only redeeming quality is the fact that there are so many festive treats that you can make! My boys ask for special desserts on almost every holiday so Halloween is obviously no different. It was an extra busy day getting ready to take the whole crew trick-or-treating so I went with my upgraded rice krispie treat recipe with Oreos and Halloween sprinkles mixed in. The super-simple recipe is below but I’m open to trying new things…have any other tasty Halloween treats worth trying? Share ’em if you’ve got ’em!
Ingredients
10 oz + 2 cups marshmallows / minis are what I use but you could make it work with jumbos chopped down to mini size
6 tablespoons butter / salted or unsalted is fine, I’ve tried both and didn’t taste a difference
6 cups crispy rice cereal / can be any variation of Rice Krispies, generic, etc.
3-6 chopped Oreo cookies / cut each cookie into pieces as large or as small as you want, I usually cut into thirds, turn, and then thirds again
Directions
Line a pan with foil or wax paper, you can also spray with baking spray instead. In a large pot, melt butter over high heat and add the 10 oz of marshmallows. Stir and melt until smooth, then remove from heat. Add in the cereal (I usually dump in half at a time) and mix until everything is evenly coated.
Gently stir in the last 2 cups of marshmallows and add in the chopped Oreos so they’re distributed throughout the mix. Transfer everything to the prepared pan and top with sprinkles. Using your hands or a smooth spatula, press into an even layer and let cool for at least one hour. Cut into squares, triangles, or special shapes using cookie cutters. Enjoy!
